From Finca Santa Mónica, this microlot is 100% Castillo, grown and processed by Jairo Arcila, one of Quindío’s most forward-thinking producers. The Castillo variety, created by Colombia’s Federación Nacional de Cafeteros, finds new expression here through Jairo’s experimental approach.
This lot underwent a Natural EF2 process—a precise fermentation technique designed to intensify sweetness while preserving fruit clarity. After fermentation, the cherries were slow-dried on raised beds to lock in structure and balance.
In the cup, it’s juicy and expressive, with bright bursts of strawberry, the stone-fruit sweetness of apricot, and a citrusy lift of blood orange. Playful yet refined, it’s a filter-brewer’s dream.
