This fruit-packed microlot from Jairo Arcila brings Castillo into a whole new flavor world—and we’re here for it.
100% Castillo, this variety was developed by Colombia’s Federación Nacional de Cafeteros to combine resilience with solid cup quality. But in the hands of Jairo, it’s anything but ordinary.
This batch was exposed to a 72-hour dry anaerobic fermentation with the pulp on. During fermentation, grapes, cherries, and blackberries were added—infusing the coffee with juicy, berry-forward character. Once fermentation wrapped, the cherries were pulped and laid out on raised beds to dry slowly and evenly.
The result? A radiant, fruit-laced cup with notes of berries, floral aromatics, and a hint of orange peel. Clean, juicy, and full of energy—it’s like your favorite fruit tart in coffee form.
