From Finca Santa Mónica, this microlot is 100% Castillo, a variety developed by Colombia’s Federación Nacional de Cafeteros. Under the care of Jairo Arcila, one of Quindío’s most innovative producers, Castillo reveals a refined, fruit-forward side.

This lot was placed into a 200-hour anaerobic natural fermentation, where whole cherries were sealed in tanks without oxygen. The slow, controlled process amplified sweetness, fruit character, and floral nuance before the cherries were carefully dried on raised beds.

The result is a lively yet elegant cup with bursts of tangerine, delicate violet florals, and a juicy raspberry finish. Bright, expressive, and balanced—this is Castillo reimagined through Jairo’s craft.
