This microlot from Jairo Arcila is a sharp, juicy reminder that fermentation is where the magic happens.
It’s 100% Castillo, a variety crafted by Colombia’s Federación Nacional de Cafeteros to hold its own in the field while still delivering in the cup. But when Jairo steps in, you know you’re getting something that’s far from standard.
This batch went through a 72-hour dry anaerobic fermentation with the pulp on. During fermentation, cranberries were added—letting their tart, bright juice mingle with the coffee’s natural sugars. Once fermentation was complete, the cherries were pulped and dried slowly on raised beds.
In the cup? Think cranberry juice, red grapes, and that mouthwatering sweet-tart balance that keeps you coming back for another sip. It’s vivid, clean, and refreshingly different—like fruit punch for grownups.
