Luz Helena Salazar (Washed lactic)
This coffee was grown by Luz Helena Salazar at the farm Maracay in the Quindio, Armenia region of Colombia . This coffee is harvested following strict ripeness criteria, floated and hand-sorted to remove any defects. Pupled cherries were then exposed to 30 hours of underwater fermentation. Only the cherries with the highest sugar content are chosen for this fermentation process to facilitate the lactic fermentation. The parchment was then gently washed and then dried in temperature controlled conditions until ideal moisture content was achieved.
This process usually yields a creamier mouthfeel. This coffee lands in our ‘mild’ category, meaning its a great clean every day cup. Expect flavors of honeydew melon, red apple, and sweet caramel.
