Finca Palo Blanco

Ivan Ovalle is one of the most quality oriented coffee producers in Guatemala. Utilizing his engineering background, Ivan has increased the water efficiency at Palo Blanco and trained the farmers to pick only the ripest cherries. His focus is mainly on sugar content (brix analysis) on when to pick the coffee cherries. This coffee is organic and has been farmed without the use of any artficial pesticides or fertiizers. After pulping, coffee is dry fermented for 36 to 48 hours. Then, parchment is washed in channels and laid to dry on a patio. After washing, parchment is laid to sundry on patios, where it will be raked regularly for 1.5 to 2 days. It is then transferred a greenhouse covered with plastic sheeting, where it will dry on raised beds for around 6 days. This is great example of a washed Guatemalan coffee that is great for everyday brewing with intense sweetness.
