Chelchele Natural Anerobic

You probably know by now that we love coffee from Ethiopia. Ethiopian coffees are incredible in every way and each year we are blown away even more.

This coffee comes from Worka Chelichele washing station in Yirgacheffe, Ethiopia. To this day, farming methods in the region are somewhat traditional. Most farmers tend to maximize the use of their land by farming many crops together with the coffee. Worka Chelichele is famed for superior quality standards and for helping many farmers produce better quality coffee cherry by providing training.

Only the ripest cherries are selected for anaerobic fermentation. Selected cherries are tightly sealed in grainpro bags and fermented anaerobically (without oxygen) for 18-24 hours. The cherries are then removed from the bags and laid to dry in the sun on raised beds for approximately 2-3 weeks. We often tasted anaerobic processed coffees that tasted too fermented and off putting to us. This coffee however blew us away! It has all the distinct lactic tropical and striking flavors you would expect from an anaerobic coffee without the extra fermented notes.
